2018 'Vintage Fortified' Shiraz

2018 was an extremely good red vintage for Clare, slightly warmer than average, but vineyards by and large achieved a great balance of fruit and acid. The base of this wine was handpicked at 13 Baume and wild fermented in an open top fermenter. Halfway through fermentation, the wine was basket pressed off into French oak barriques containing a blend of neutral and brandy spirit. The addition of spirit halts the fermentation leaving residual sweetness in the wine and strengthening the alcohol content thus, fortifying the wine.
