Colour: Light, pale green.
Aroma: Fresh aromas of kaffir lime leaf, lemon blossom, and wet slate nuances. Very inviting.
Palate: Light and fresh with citrus fruits being the main drivers here. Bright acidity and slatey undertones balance the sweetness perfectly and adds length and texture as well. Delicious.
Summary: Made from the fruit grown on the block across the creek from where the “The Merle” is sourced, this “off dry /Spaetlese” style is back in vogue. It’s a terrific match with a Vietnamese hot and sour soup or with spicy bbq quail. It can take some bottle age too, say 5 – 7 years.
