Recipe of the Season

Now the weather is warming up, a nice glass of something cold is in order, whether it be a Luccio Pinot Grigio or Riesling or Sauvignon Blanc, or perhaps Pikes Oakbank Sparking is more your taste. Try it with this following recipe. Enjoy!

Yabbie and macadamia salad with soy and lime dressing (serves 4)

Ingredients:
100ml sweet soy sauce
½ tsp seeded red chilli – finely diced
1 tsp finely chopped ginger
1 tsp finely chopped garlic
Juice & zest of 2 limes
2 tbls water
20 cooked yabbie tails
1 med. Lebanese cucumber – sliced into ribbons
100g snow pea sprouts
1 spring onion – finely sliced
¼ cup fresh coriander – roughly chopped
24 roasted macadamia nuts
8 blanched snow peas – thinly sliced

Method:
In a bowl, combine soy, chilli, ginger, garlic, lime juice & zest. Stir to mix all the ingredients & taste and then adjust to your taste for extra chilli or lime. Season if required.
In 4 small bowls evenly distribute the remaining ingredients & mix together well to make a salad mix. Place small mounds on individual entree plates or shallow bowls & spoon over the sauce prepared earlier.
Garnish with more fresh coriander.
